Introduction: Foodsafetyandpreservationhavebecomecriticalconcernsinrecentyears,leadingtoanincreaseddemandforsustainableandeffectivefoodpackagingsolutions.Ediblepackagingfilms,madefromnaturalmaterialssuchaspotatostarch,haveemergedasapotentialalternativetopetroleum-basedpackagingmaterials.Theantimicrobialpropertiesofpotatostarchfilmsmakethemapromisingchoiceforextendingtheshelflifeofperishablefoodproductsandreducingtheriskoffoodborneillnesses. MaterialsandMethods: Inthisstudy,potatostarchwasisolatedfromfreshpotatoesandusedastherawmaterialforthepreparationofediblefilms.Differentprocessingmethods,includingcastingandextrusion,wereutilizedtoformthepotatostarchfilms.Additionally,antimicrobialagentssuchasessentialoilsandplantextractswereincorporatedintothefilmmatrixtoenhancetheantimicrobialproperties. ResultsandDiscussion: Theantimicrobialactivityofthepotatostarchfilmswasevaluatedagainstarangeoffoodbornepathogens,includingbacteriaandfungi.Theresultsindicatedthatthepotatostarchfilmsexhibitedsignificantinhibitionagainstthegrowthofvariousmicroorganisms.Thisantimicrobialactivitycanbeattributedtothepresenceofbioactivecompoundsinpotatostarch,aswellastheantimicrobialadditivesusedinthefilmformulation.Theincorporationofessentialoilsandplantextractsfurtherenhancedtheantimicrobialactivityofthepotatostarchfilms.
