Introduction Ediblecompositeproteinfilmsarewidelyusedinthefoodindustryasanalternativetotraditionalsyntheticplasticfilms.Thesefilmshavetheadvantagethattheyarebiodegradable,edible,andproducedfromrenewableresources.However,thebarrierandmechanicalpropertiesofthesefilmsareofteninadequateforpracticalapplications.Inordertoaddressthisissue,researchershavebeenworkingondevelopingmethodstoenhancetheperformanceofthesefilms. Polylacticacid(PLA)isabiodegradableandrenewablethermoplasticpolymerthatiscommonlyusedinfoodpackagingapplications.Chitosan,abiopolymerderivedfromchitin,isalsoacommonlyusedmaterialinediblecompositeproteinfilmsduetoitsfilm-formingproperties.Studieshaveshownthatblendingthesetwomaterialscanimprovethepropertiesofthefilms. Pullulanisawater-solublepolysaccharidethatisproducedbythefermentationofAureobasidiumpullulans.Ithasvariousapplicationsinthefoodindustry,includingasafoodadditive,thickener,andgellingagent.Inthisstudy,weinvestigatetheuseofPullulanasanadditivetoenhancethepropertiesofPLAandchitosanblendfilms.
