TheHistoryofthePotatoChips1853SaratogaSpringsNewYorkAsaworldfoodpotatoesaresecondinhumanconsumptiononlytorice.AndasthinsaltedcrispchipstheyareAmerica'sfavoritesnackfood.PotatochipsoriginatedinNewEnglandasoneman'svariationontheFrench-friedpotatoandtheirproductionwastheresultnotofasuddenstrokeofculinaryinventionbutofafitofpique.Inthesummerof1853AmericanIndianGeorgeCrumwasemployedasachefatanelegantresortinSaratogaSpringsNewYork.OnMoonLakeLodge'srestaurantmenuwereFrench-friedpotatoespreparedbyCruminthestandardthick-cutFrenchstylethatwaspopularizedinFranceinthe1700sandenjoyedbyThomasJeffersonasambassadortothatcountry.EversinceJeffersonbroughttherecipetoAmericaandservedFrenchfriestoguestsatMonticellothedishwaspopularandseriousdinnerfare.AtMoonLakeLodgeonedinnerguestfoundchefCrum'sFrenchfriestoothickforhislikingandrejectedtheorder.Crumcutandfriedathinnerbatchbutthesetoometwithdisapproval.ExasperatedCrumdecidedtoriletheguestbyproducingFrenchfriestoothinandcrisptoskewerwithafork.Theplanbackfired.Theguestwasecstaticoverthebrownedpaper-thinpotatoesandotherdinersrequestedCrum'spotatochipswhichbegantoappearonthemenuasSaratogaChipsahousespecialty.SoontheywerepackagedandsoldfirstlocallythenthroughouttheNewEnglandarea.Crumeventuallyopenedhisownrestaurantfeaturingchips.Atthattimepotatoesweretediouslypeeledandslicedbyhand.Itwastheinventionofthemechanicalpotatopeelerinthe1920sthatpavedthewayforpotatochipstosoarfromasmallspecialtyitemtoatop-sellingsnackfood.ForseveraldecadesaftertheircreationpotatochipswerelargelyaNortherndinnerdish.Inthe1920sHermanLayatravelingsalesmanintheSouthhelpedpopularizethefoodfromAtlantatoTennessee.LaypeddledpotatochipstoSouth
