聚甘油脂肪酸酯QSPR的研究 Title:QSPRStudiesontheAggregationofGlycerolFattyAcidEsters Abstract: Inrecentyears,theuseofglycerolfattyacidestershasgainedincreasingattentionduetotheirversatileapplicationsinthefood,cosmetic,andpharmaceuticalindustries.However,theunderstandingoftheaggregationbehavioroftheseestersremainslimited.Thispaperaimstoconductaquantitativestructure-propertyrelationship(QSPR)studyontheaggregationofglycerolfattyacidesters.Throughtheanalysisofmoleculardescriptorsandexperimentaldata,thisstudyprovidesinsightsintothefactorsaffectingtheaggregationbehavioroftheseesters,facilitatingtheirefficientutilizationinvariousapplications. 1.Introduction: Glycerolfattyacidesters,alsoknownasglycerides,arewidelyusedinvariousindustriesasemulsifiers,surfactants,andstabilizersduetotheiramphiphilicnature.Aggregationisanessentialpropertyfordeterminingtheemulsification,solubilization,andstabilityoftheseesters.Therefore,understandingtheaggregationbehaviorofglycerolfattyacidestersiscrucialforoptimizingtheirapplicationsindifferentproducts. 2.Methodology: TheQSPRapproachisemployedtoinvestigatetheaggregationbehaviorofglycerolfattyacidesters.Adiversesetofmoleculardescriptors,includingbutnotlimitedtosize,shape,polarity,andchargedistribution,arecollectedfromvarioussources.Thesedescriptorsarethencorrelatedwithexperimentaldataontheaggregationproperties,suchascriticalmicelleconcentration(CMC)andaggregationnumber. 3.ResultsandDiscussion: Theanalysisrevealsthatboththehydrophilicheadgroupandthehydrophobictailregionofglycerolfattyacidesterscontributetotheiraggregationbehavior.Thelengthandsaturationofthefattyacidchainssignificantlyinfluencetheaggregationproperties.Longerandmoresaturatedchainstendtoenhancetheself-assemblyabilityoftheesters,leadingtohigherCMCvaluesandlargeraggregationnumbers. Furthermore,thepresenceofunsaturatedfattyacidchainsintroduceskinksandflexibilityintheestermolecules,whichcanaffecttheirabilitytoformtightaggregates.ThedegreeofunsaturationisfoundtohaveanegativecorrelationwithCMCvalues
