Introduction: Monascuspurpureusisafilamentousfungusthathasbeenusedforcenturiesinthetraditionalpreparationofredyeastrice,afermentedriceproductwithvarioushealthbenefits.Thefungalstrainisknownforitsabilitytoproduceseveralsecondarymetabolites,includingMonacolinKandvariouspigments.MonacolinK,alsoknownaslovastatin,isanaturallyoccurringstatinthatiswidelyusedasananticholesterolmedication.Additionally,Monascuspigmentspossessantioxidant,antimicrobial,andanticanceractivities,makingthemofinterestforindustrialapplications. Methods: 1.Selectionofsolid-statefermentationsubstrates:Differentsubstrates,suchasrice,wheat,andcorn,wereevaluatedfortheirsuitabilityinsupportingMonascuspurpureusgrowthandsecondarymetaboliteproduction.Thesesubstratesweresterilized,inoculatedwithMonascusspores,andincubatedatoptimaltemperatureandhumidity. 2.Fermentationoptimization:Parameterssuchastemperature,moisturecontent,pH,andincubationtimewereoptimizedtoenhanceMonacolinKandpigmentyields.Statisticalmethods,suchasresponsesurfacemethodology(RSM),wereemployedtodeterminetheoptimalfermentationconditions. 3.Analyticaltechniques:High-performanceliquidchromatography(HPLC)wasusedtoquantifyMonacolinKproduction.Spectrophotometricanalysiswasemployedtomeasurethepigmentcontentandassesspigmentprofiles. Results: 1.SubstrateinfluenceonMonacolinKandpigmentproduction:Amongthetestedsubstrates,riceshowedthehighestMonacolinKyield,followedbywheatandcorn.Ricesubstratealsor
