30TheoriginofRefrigeratorsBythemid-nineteenthcenturytheterm“icebox”hadenteredtheAmericanlanguagebuticewasstillonlybeginningtoaffectthedietofordinarycitizensintheUnitedStates.Theicetradegrewwiththegrowthofcities.Icewasusedinhotelstavernsandhospitalsandbysomeforward-lookingcitydealersinfreshmeatfreshfishandbutter.AftertheCivilWar(1861-1865)asicewasusedtorefrigeratefreightcarsitalsocameintohouseholduse.Evenbefore1880halfoftheicesoldinNewYorkPhiladelphiaandBaltimoreandone-thirdofthatsoldinBostonandChicagowenttofamiliesfortheirownuse.Thishadbecomepossiblebecauseanewhouseholdconveniencetheiceboxaprecursorofthemodernrefrigeratorhadbeeninvented.Makinganefficienticeboxwasnotaseasyaswemightnowsuppose.Intheearlynineteenthcenturytheknowledgeofthephysicsofheatwhichwasessentialtoascienceofrefrigerationwasrudimentary.Thecommonsensenotionthatthebesticeboxwasonethatpreventedtheicefrommeltingwasofcoursemistakenforitwasthemeltingoftheicethatperformedthecooling.Neverthelessearlyeffortstoeconomizeiceincludedwrappinguptheiceinblanketswhichkepttheicefromdoingitsjob.Notuntilneartheendofthenineteenthcenturydidinventorsachievethedelicatebalanceofinsulationandcirculationneededforanefficienticebox.Butasearlyas1803andingeniousMarylandfarmerThomasMoorehadbeenontherighttrack.HeownedafarmabouttwentymilesoutsidethecityofWashingtonforwhichthevillageofGeorgetownwasthemarketcenter.Whenheusedaniceboxofhisowndesigntotransporthisbuttertomarkethefoundthatcustomerswouldpassuptherapidlymeltingstuffinthetubsofhiscompetitorstopayapremiumpriceforhisbutterstillfreshandhardinneatone-poundbricks.OneadvantageofhisiceboxMooreexplainedwasthatfarmerswouldnolongerhavetotravelto
