Introduction: Soybeanlecithinisanaturalemulsifierthatconsistsmainlyofphospholipids,suchasphosphatidylcholine,phosphatidylethanolamine,andphosphatidylinositol.Thesephospholipidspossessseveralbeneficialproperties,includingemulsifying,stabilizing,andantioxidantactivities.Therefore,soybeanlecithinfindsextensiveapplicationsinvariousindustries,includingfood,pharmaceuticals,andcosmetics.However,theconventionalextractionmethodsforsoybeanlecithininvolvetheuseoforganicsolvents,whichraiseconcernsregardingtoxicityandenvironmentalpollution.Inrecentyears,theutilizationofionicliquidsasalternativestoconventionalsolventsforextractionandpurificationhasemergedasapromisingapproach.Ionicliquidsaremoltensaltsatroomtemperaturewithuniquephysicochemicalpropertiesthatendowthemwithadvantagesinvariousapplications,includingextractionandseparationprocesses. Methods: Inthisstudy,soybeanlecithinwasextractedfromsoybeansusinganionicliquid-basedmethod.Theionicliquidusedfortheextractionwascarefullyselectedbasedonitssolubilitypropertiestowardsphospholipids.Theextractionprocessinvolvedgrindingthesoybeans,mixingthemwiththeionicliquid,andsubjectingthemixturetoultrasonicationtoenhancetheextractionefficiency.Theresultingmixturewasthenfilteredtoobtainthelecithin-richextract.Topurifytheextractedlecithinandremoveanyimpurities,aseri
