超声辅助提取紫甘蓝中原花青素工艺的优化(英文) OptimizationofUltrasonic-AssistedExtractionofAnthocyaninsfromPurpleCabbage Abstract Anthocyaninsareagroupofnaturalpigmentswithvarioushealthbenefits.Purplecabbageisarichsourceofanthocyanins.Inthisstudy,ultrasonic-assistedextraction(UAE)technologywasemployedtoextractanthocyaninsfrompurplecabbage.Theeffectsofdifferentfactors,includingextractiontime,temperature,solvent-to-solidratio,andultrasonicpower,ontheextractionefficiencywereinvestigated.TheresultsshowedthattheoptimalconditionsforUAEofanthocyaninsfrompurplecabbagewereasfollows:extractiontimeof50min,extractiontemperatureof50°C,solvent-to-solidratioof20:1(mL/g),andultrasonicpowerof280W.Undertheseconditions,theyieldofanthocyaninswasupto46.7mg/gdryweight.Theextractedanthocyaninswereanalyzedbyhigh-performanceliquidchromatography,andsixmajoranthocyanincompoundswereidentified,includingcyanidin-3-O-glucoside,cyanidin-3-O-rutinoside,peonidin-3-O-glucoside,peonidin-3-O-rutinoside,pelargonidin-3-O-glucoside,andmalvidin-3-O-glucoside.Thisstudyprovidesatheoreticalbasisfortheutilizationofpurplecabbageasasourceofanthocyaninsinfoodandmedicine.
