Introduction: Thearomaoffruitsplaysacrucialroleinconsumerpreferenceandacceptance.Amongfruits,apples(Malusdomestica)arewidelyconsumedandappreciatedfortheirdiverseflavorsandcharacteristicaromas.TheGrannySmithapple,apopularcultivar,isgloballyrecognizedforitsdistincttartnessandrefreshingaroma.Thevolatilecompoundsresponsibleforthesesensoryattributeshavegainedsignificantinterestinrecentyears.Therefore,thisstudyaimedtoanalyzethevolatilearomaticcomponentsofGrannySmithapplesusingtheSPME-GCMStechnique. Methods: 1.Samplepreparation:FreshGrannySmithapplesampleswereselectedandthoroughlywashed.Theappleswerepeeled,sliced,andhomogenizedtoensureuniformity. 2.SPME-GCMSextraction:AnSPMEfibercoatedwithpolydimethylsiloxane(PDMS)wasusedfortheextraction.Thefiberwasexposedtotheheadspaceofthesampleforaspecifiedtimetoallowfortheabsorptionofvolatilecomponents.ThefiberwastheninsertedintotheGCinjectorportforthermaldesorption. 3.GCMSanalysis:Agaschromatographcoupledwithamassspectrometer(GCMS)wasemployedtoseparateandidentifytheextractedvolatilecompounds.Thecolumnwastemperature-programmedtomaximizeresolution.Massspectrometryprovidedinformationonthemass-to-chargeratio(m/z)andrelativeabundanceofthecompounds,whichfacilitatedtheiridentification.
