Introduction: Capsaicinisanimportantspicyingredientinmanyfoods.Capsaicincontainsavarietyofbeneficialcomponentsforhumanhealth.Capsaicinseedoilextractedfromcapsaicinseedsisavaluableproductthathasreceivedincreasingattentioninrecentyears. SupercriticalCO2extractionisagreenandefficientextractiontechnologythathasbeenwidelyusedintheextractionofnaturalproducts.Comparedwithtraditionalsolventextractionmethods,supercriticalCO2extractionhastheadvantagesofhighextractionefficiency,mildextractionconditions,andnotoxicresidue. Inthisstudy,weaimedtoinvestigatethekineticsofsupercriticalCO2extractionofcapsaicinseedoil.Theeffectsofvariousparametersontheextractionyieldwerestudied,andmathematicalmodelswereestablishedbasedontheexperimentalresults. ExperimentalMethods: CapsaicinseedoilwasextractedusingsupercriticalCO2extractionequipment(modelSCCO2-60L,JilinUniversity)atdifferentextractiontimes,extractiontemperatures,pressures,andparticlesizes.Theyieldofcapsaicinseedoilwasmeasuredbyweighing.Thedatawerefittedusingthefollowingkineticmodels: -First-ordermodel -Yangmodel -Luikov'smodel ThekineticsofsupercriticalCO2extractionofcapsaicinseedoilwereanalyzedbasedontheexperimentaldataandtheestablishedmodels.
