大豆降压肽酶解制备工艺的优化研究 Title:OptimizationofEnzymaticHydrolysisProcessforthePreparationofSoybeanHypotensivePeptide Abstract: Soybeanhypotensivepeptide,abioactivepeptidederivedfromsoybeans,hasshownpotentialinloweringbloodpressure.Enzymatichydrolysisisaneffectivemethodfortheproductionofsoybeanhypotensivepeptide.However,theoptimizationoftheenzymatichydrolysisprocessiscrucialtomaximizetheproductionyieldandenhancethebioactivityofthepeptide.Thisstudyaimstooptimizetheenzymatichydrolysisprocessforthepreparationofsoybeanhypotensivepeptide. 1.Introduction: Hypertensionisacommonhealthissueworldwide,oftenleadingtocardiovasculardiseases.Syntheticantihypertensivedrugshavevarioussideeffects,andnaturalcompoundswithhypotensivepropertieshavegainedattention.Soybeanhypotensivepeptide,derivedfromsoyprotein,hasshownpotentialasanaturalantihypertensiveagent.Enzymatichydrolysisisaneffectivemethodforthepreparationofsoybeanhypotensivepeptide,asitcangenerateahigheryieldofbioactivepeptidescomparedtoothermethods. 2.Methodology: 2.1SelectionofEnzymes: Differentproteolyticenzymescanbeusedforsoybeanhydrolysis,includingpepsin,trypsin,andAlcalase.Theselectionofenzyme(s)dependsontheirspecificity,efficiency,andcost.Theenzyme(s)shouldhavehighspecificitytowardssoybeanproteinsandproducepeptideswithhypotensiveactivity. 2.2OptimizationofEnzymeConcentrationandReactionTime: Theconcentrationofenzyme(s)isacrucialfactoraffectingthehydrolysisprocess.Itshouldbeoptimizedtoensuremaximumpeptideyieldwithoutcompromisingthebioactivity.Thereactiontimemustalsobeoptimizedtoachievecompletehydrolysiswithoutexcessivedegradation. 2.3OptimizationofSubstrateConcentration: Theconcentrationofsoybeanproteinsubstrateplaysavitalroleinthehydrolysisprocess.Anappropriatesubstrateconcentrationshouldbedeterminedtoobtainahigherpeptideyield.However,excessivesubstrateconcentrationmayinduceenzymeinhibitionduetosubstrateinhibition. 2.4EffectofpHandTemperature: pHandtemperatureareessentialfactorsinenzymatichydrolysis.TheoptimalpHandtemperatureshouldbe
