Methods: ToinvestigatethecontentanddistributionofCdinriceduringmillingandprocessing,aseriesofexperimentswereconducted.First,samplesofricegrainswerecollectedfromdifferentsourcesknowntobepronetoCdcontamination,suchasindustriallypollutedareasorregionswithsoilenrichedinCd.Thesesampleswerethenprocessedinalaboratorysettingtosimulatecommonmillingandprocessingtechniques,includinghulling,polishing,andwhitening. Results: TheresultsofthestudyrevealedsignificantvariationsinCdcontentatdifferentstagesofriceprocessing.Initially,theCdcontentwasobservedtobehigherinunprocessedricegrains,particularlyintheouterlayerssuchasthehullandbran,duetothetendencyofCdtoaccumulateintheseparts.Asthemillingandprocessingprogressed,theCdcontentdecreasedconsiderably.Hullingandpolishing,whichinvolvedremovingtheouterlayers,ledtoanotablereductioninCdcontent.Additionally,thewhiteningprocessfurtherreducedtheCdcontentasitinvolvedremovingtheremainingbran. ThedistributionofCdwithinricegrainswasalsoinvestigated.ItwasfoundthatCdwaspredominantlyconcentratedintheouterlayers,withlowerlevelsdetectedintheendosperm.Thisdistributionpatternalignedwithpreviousstudiesonotherheavymetalsinricegrains. Discussion: TheobservedreductioninCdcontentduringricemillingandprocessingcanbeattributedtotheremovaloftheouterlayers,whereCdtendstoaccumulate.Hulling,polishing,andwhiteningprocesseseffectivelyreducedtheoverallCdcontentinrice.However,itisimportanttonotethatevenafterprocessing,traceamountsofCdmaystillremainintheendosperm.
