3种沙棘油的主要成分及抗氧化能力比较

摘要：比较3种沙棘油的脂肪酸组成、总酚含量以及体外抗氧化能力。根据国标测定3种沙棘油的理化性质，采用
气相色谱法测定3种沙棘油的主要脂肪酸及相对百分含量，紫外可见分光光度计法测定了总酚含量，以及DPPH自
由基清除能力、ABTS+自由基清除能力、还原能力和总抗氧化能力。3种沙棘油主要含有棕榈酸、硬脂酸、油酸、亚油酸
和亚麻酸这5种脂肪酸，含量各不相同，3种沙棘油脂肪酸含量的区别主要在于亚油酸和亚麻酸，沙棘籽油含量约为
64.52%、沙棘果油含量约为58.02%、沙棘全果油含量约为60.46%，其中以沙棘果油的亚油酸含量最高，以沙棘籽油
的亚麻酸含量最高。DPPH自由基清除率和总抗氧化能力方面，三者没有显著差异；在还原力方面，沙棘籽油>沙棘全
果油>沙棘果油；在ABTS+自由基清除试验中，沙棘果油的效果略好于其他两者。

Abstract：Inthisstudy，thefattyacidcomposition，totalphenolcontentandtheinvitroantioxidantcapacityof
threekindsofseabuckthornoilwerecompared.Thephysicochemicalpropertiesofthreekindsofseabuckthorn
oilweredeterminedaccordingtoGB，andthemainfattyacidsandrelativepercentagecompositionofthree
seabuckthornoilweredeterminedbygaschromatography（GC）.Thetotalphenolcontent，DPPHfreeradical
scavengingability，ABTS+freeradicalscavengingcapacity，reducingpowerandtotalantioxidantcapacitywere
measuredbyUV-Visspectrophotometer.These3kindsofseabuckthornoilmainlycontain5kindsoffatty
acids，palmiticacid，stearicacid，oleicacid，linoleicacidandlinolenicacid，whicharedifferentincontent.
Thedifferencesbetweenfattyacidcontentofthese3kindsofseabuckthornaremainlylinoleicacidandlinolenic
acid.Thecontentsoffattyacidsinseabuckthornseedoil，seabuckthornfruitoilandseabuckthorntotalfruitoil
wereabout64.52%，58.02%and60.46%，respectively.Amongthem，thelinoleicacidcontentinseabuckthorn
fruitoilwasthehighest，andthelinolenicacidcontentinseabuckthornseedoilwasthehighest.InDPPHfree
radicalscavengingrateandtotalantioxidantcapacity，therewasnosignificantdifferencebetweenthethree
